400g of plain flour (ish)
120g of light brown sugar
1 large egg
5g of yeast (i think.. just a wee packet)
150ml of milk
~100g of butter
tablespoon of golden syrup
teaspoon of mixed spice
150g of mixed fruit (i just use currents for simpler deliciousness remember less is more)
3 BLACK AS THE NIGHT! Bananas


1) add yeast to milk and leave covered in a warm place to ferment for a bit
2) go watch tv
2.1) preheat oven to gas mark 4
2.5) melt butter and golden syrup in a pan
3) add flour, mixed spice and sugar in a bowl and make a well
4) break egg into well and pour in the fermented mixture
5) stir around a bit
6) add butter and golden syrup mix
7) stir some more
8) add your currents
9) you should have a mixture which is just a bit thicker than cake mix, i guess at my measurements so add more flour if needed
9.5) crush the bananas with a fork and mix into the mix
10) allow to rise for a bit in the bowl with a tea cloth over it
11) butter a bread tin (i actually used a large casserole dish because i'd made so much)
12) bake for about 1 hour, possibly more, its ok if its still only slightly gooey because its nicer toasted that way


delicious with cups of tea!
